Salad:
- 3 cups water
- 1/4 teaspoon salt
- 1/2 cup Western Trails barley
- 1 large bunch broccoli, cut into flowerettes, peel and chunk stems
- 1 cup raisins and 1/2 cup thinly sliced red onion
- 10 strips bacon, fried crisp and crumbled
- 1 cup roasted sunflower seeds
Dressing:
- 1/4 cup sugar
- Heaping 1/3 cup mayonnaise
- Heaping 1/3 cup yogurt
- 2 tablespoon white vinegar
Cook barley 50-60 minutes in 2 cups water. Drain, rinse and chill. Combine all ingredients. Prepare dressing. Toss and chill all together.
