- 1 pound Western Trails red kidney beans
- 1 pound Western Trails great northern beans (or lima beans)
- 1 pound Western Trails pink beans
- 1 pound Western Trails pinto beans
- 1 pound Western Trails black beans
- 1 pound small white beans
- 1 pound black-eyed peas
- 1 pound lentils
- 1 pound split green peas
Mix beans together. Soak beans overnight with no salt. Next day, drain water. Add new water to beans enough to cover them.
- 1 large onion, chopped
- 1 large can tomatoes
- 1 teaspoon chili powder
- 1 clove garlic, chopped
- 1 bay leaf
- Juice of 1 lemon
- Salt and Pepper (to taste)
- Ham hock(s)
Add other ingredients. Cook slowly until tender.
