Hulless Barley Nutrition
This centuries-old grain not only adds flavor and texture to favorite dishes, but plenty of soluble fiber too. Clinical studies prove that the soluble fiber found in barley lowers cholesterol and reduces the risk of coronary heart disease. In fact, the heart-healthy benefits of barley are so significant that the US Food and Drug Administration authorized a health claim that barley beta-glucan soluble fiber reduces the risk of heart disease. Our waxy hulless barley has 2 times more beta-glucan soluable fiber than oats and other types of barley. More importantly, this fiber can produce 5-20 times more viscosity in the small intestine, which is believed to be the most important characteristic in cholesterol reduction. A 40 gram serving of Barley Flakes or "Boost'R Flakes" provides 3 grams of soluble fiber. Oatmeal and most other barley provides only 1.6 to 2 grams of soluble fiber per serving.

Barley—An Ancient Grain With New Uses
Modern barley varieties have enhanced nutritional quality and new food product possibilities. As an alternative whole grain, barley offers unique flavor and texture for a variety of dishes. All barley is not equal. Western Trails Food has some very special varieties, which are unusually high in protein, lysine, fiber, and beta-glucans.

High Protein—Whole-grain barley has from about 12 to 15% protein.

High Lysine—Lysine is an amino acid needed to produce complete proteins in the body. Lysine is the one most commonly deficient in cereal grains. Our high lysine barley generally has about 0.40% lysine compared to 0.25% in corn, and 0.37% in winter wheat.

High Fiber—Barley contains the unique water-soluble fiber form, beta-glucan, which is reported to have serum cholesterol lowering properties. The insoluble fiber fractions have water-holding properties that aid in gastrointestinal function and in preventing constipation.

Gluten Allergy—Barley has a different type of gluten than wheat. Persons who are allergic to wheat or sensitivity to wheat gluten may or may not be able to tolerate barley. Anyone with wheat sensitivity should test small amounts of barley for reaction.

Barley contains the minerals calcium, chromium, copper, iron, magnesium, manganese, phosphorus, selenium and zinc. It also provides the amino acids alanine, arginine, aspartate, cystine, glutamate, glycine, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, proline, serine, threonine, tryptophan, tyrosine and valine.

Waxy Hulless Barley
Light color grain with excellent nutritional and food qualities:

1. Whole grain Hulless Barley (14-16% protein, 2-3% crude fat, 8-10% insoluble fiber, 8-10% soluble fiber, 55-60% starch) contains 2-3 times the soluble fiber (SF) found in oat grains. The high quality SF reduces dangerous low density lipoprotein (LDL) cholesterol while maintaining the useful HDL cholesterol. Thus not only is total cholesterol reduced but the all important HDL/LDL ratio is improved.

2. The cholesterol reducing compound D-alpha-tocotrienol (one form of Vitamin E) is found in the germ and aleurone. 20 ppm can reduce cholesterol by 15% in 3 weeks. Hulless Barley flour averages 50 ppm.

3. Hulless barley is unique. It is the only cereal grain which contains high levels of cholesterol reducing compounds which work in two different ways:
a. Soluble fiber works in the gut to inhibit absorption of ingested cholesterol and remove bile.
b. D-alpha-tocotrienol works in the liver to inhibit cholesterol synthesis.

4. Barley flour can be used in place of wheat in all food except leaven breads. In yeast breads up to 1/3 of the wheat flour can be substituted with barley flour with no reduction in loaf quality, but added healthy soluble fiber and tocotrienol.

5. The combination of hulless seed, waxy starch, and very high levels of soluble fiber yields an extremely palatable grain. In processing, barley kernels puff up double normal barley. The waxy starch has exceptional freeze-thaw stability, thus the flour is a valuable ingredient in products which require freezing.
